I haven't been posting menus lately because it's just been really busy and my computer time has been more limited.
This is my menu for this week:
Sunday: Leftover Spinach, Potato & Tomato Soup and I made some homemade garden herb bread that I started in the bread machine for the dough cycle, and finished by baking in the oven.
Monday: Acapulco chicken (we double the recipe and I chunk the vegetables, and when it's all done, I add about half a cup of chicken broth with a little bit of cornstarch and a few TBSP of sour cream to make a sauce. We serve it over rice, and we had a salad with it as well. It is delicious, but the fumes can be overpowering when you are cooking it... just a warning. It is really, really good, but with all the spiciness, I definitely have to use my vent over the stove.
Tuesday: Chuck roast with a sweet n' spicy cocoa rub mixed with a little bit of chipotle chili powder, put in the crockpot that had a bag of baby carrots, 5 quartered red potatoes and one quartered onion. I seared the roast after the rub was applied, and then deglazed the pan and added that to the crockpot and let it cook all day. It was fantastic!
Wednesday: Chili Mac & bread.
Thursday: The kids school is having a pizza party at Luigi's which is a fundraiser to help raise funds so the 4th graders can go to Springfield. So, we are going since Ryan is in fourth grade this year. I wish we could have done this every year, but I feel particularly like I we should go to this one.
Friday: It's Zane's birthday, and we are actually making a very simple meal that he actually likes. We will have chipped beef on toast with some fruit. But we will also be going to the water park at the Vaughan Center since Andy got a free pass to the Vaughan Center facility since he served in the military. It's Veteran's Appreciation Month, and we get to benefit from it. So, when we are done there, we will come home and have cupcakes and Zane will get to open presents.
Saturday: Taco Soup, corn bread
